Dates have been a staple food in the Middle East and parts of South Asia for thousands of years. They are believed to have originated around the Persian Gulf, and have been cultivated since ancient times from Mesopotamia and to prehistoric Egypt. The UAE is the fourth largest producer of Dates in the world.
Dates ripen in four stages, which are known throughout the world by their Arabic names kimri (unripe), khlal (full-size, crunchy), rutab (ripe, soft), tamr (ripe, sun-dried). We harvest all our dates in between the khlal and rutab stage. At this stage Dates are most nutritious and contain less sugar. So the tip of the date will be soft and darker whereas the rest of the date will still be crunchy and light in colour.
